Butternut Squash Soup

Ingredients:

 

- 1 medium butternut squash
- 1 large onion
- 1 red pepper
- 2 carrots
- 1 leek
- 4 large potatoes
- 2 litres of chicken stock

- 300ml of milk

- Salt and pepper

 

 

 

 

 

 

 

 

 

Step One:

Prepare and chop vegetables.

 

Step Two:

Place in a large saucepan. Add stock, salt and pepper. Bring to a simmer and cook until all vegetables are soft.

 

Step Three:

Blend with a hand blender. Stir in milk, taste and adjust seasoning if required.

 

Step Four:

Ladel into a soup bowl.

 

Step Five:

Garnish with whipped cream and croutons.

 

Step Six:

To make croutons. Cut small squares of bread and place in a hot oven for a few minutes.

Carrot Soup

Ingredients:

 

- 3 large carrots
- 3 large potatoes
- 1 large sweet potato
- 1 large onion
- 2 sticks of celery
- 2 litres if chicken stock
- 300ml of milk

- salt and pepper

- 2tsp. of sugar

 

 

 

 

 

 

 

 

 

Step One:

Prepare and chop vegetables.

 

Step Two:

Place in a large saucepan. Add stock, salt and pepper and bring to a simmer. Cook until all vegetables are soft.

 

Step Three:

Add sugar and blend with a hand blender.

 

Step Four:

Stir in milk, taste and adjust seasoning if required.

 

Step Five:

Serve in a soup bowl with some melba toast.

 

Step Six:

To make melba toast cut the crusts off a slice of bread. Toast both sides under grill. Cut slice through the center and toast again.

 

 

 

 

 

 

 

 

 

 

Mushroom Soup

Ingredients:

 

- 500g of mushrooms
- 4 large potatoes
- 2 sticks of celery
- 1 large onion
- 1 1/2; litres of chicken stock
- 200mls of milk

- salt and pepper

 

 

 

 

 

 

 

 

 

Step One:

Prepare and chop vegetables.

 

Step Two:

Place in a large saucepan with Chicken stock. Add salt and pepper.

 

Step Three:

Bring to a simmer. And cook until potatoes are soft.

 

Step Four:

Blend with a hand blender, stir in the milk and taste. Add more seasoning if required.

 

Step Five:

Ladel into a soup bowl put a blob of whipped cream on top and sprinkle with chopped parsley.

 

Step Six:

Serve with homemade brown soda bread.
